- 2 cup unbleached all purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cup whole milk
- 1 cup mango puree
- 1 teaspoon vanilla extract
- 1/2 teaspoon ginger juice
- butter for the griddle
- In a large bowl, whisk the flour, sugar, baking powder, cinnamon and salt together.
- Add the mango puree, milk, vanilla and ginger juice,whisk until combined.
- Strain the batter in another bowl, to avoid lumps.
- Lightly butter non-stick pan and set over a medium heat(roughly upto 180'c) start pouring 1/4 scoop of the batter onto the griddle and cook about 2 minutes or until you see few little bubbles on the surface.
- Flip them over with the spatula once the edges starts to dry and cook the another side for 2 minutes until golden.
- Repeat with the remaining batter, adding more butter the pan as needed.
- Serve the pancakes in stacks with condiments.
